BREAKFAST BURRITO
There are many great varieations to breakfast burritos. Here are a few...
Ingredients
1 egg
1 flour tortilla
1 ounce shredded, Cheddar cheese (or other cheese such as Monterey Jack)
Cooking Instructions
In a small bowl whisk the egg with salt and pepper until the yolk and white are evenly mixed.
Pour the egg mixture into the other skillet and stir until cooked through and the egg is light and fluffy.
Place the tortilla in one skillet to warm it, about 1 minute per side.
Lay the warmed tortilla on a plate and place the cooked egg in the middle, sprinkle with the cheese, roll up tightly and serve.
Variation: Add chunks of bacon, sausage and or hashbrowns. Just don't make it too big!
